My Reuben Stuffed Meatloaf is a delicious twist on my classic meatloaf recipe. An incredibly flavorful meat mixture is rolled with sandwich ingredients, creating a tender meatloaf that is sure to become one of your favorite comfort foods! It's inherently gluten free and low carb, as well!
The closest thing I have to a regular meatloaf is my Scotch Egg Meatloaf.
It was my favorite meatloaf recipe for many years - the use of vegetables packed so much flavor into each one, and the egg added a fun appearance AND a good hit of protein.
Add some green beans or broccoli, and it was a perfect way to have a high protein, relatively low carb meal that the whole family would love.
I’ve been super bus, and throwing on a meatloaf is a great way to ensure that we’ve got a meal ready, when I forget to plan/cook for dinner.
One meatloaf only takes maybe 15 minutes of work, and can be sliced up and reheated as an easy weeknight dinner for a few days to come.

Stuffed Meatloaf Recipes!
Anyway, I’ve been designing a few different cheese-stuffed meatloaf recipes over the last year or two. Stromboli Meatloaf is a show stopper, Thanksgiving Turkey Meatloaf is a great holiday option, and my Chicken Cordon Bleu Meatloaf has been a go-to for a long time now. Muffaletta Stuffed Meatloaf might just be my favourite, though!
... but it’s also got corned beef and sauerkraut inside, a well seasoned meat mixture, and Thousand Island topping!
It’s not the only sandwich-themed meatloaf I’ve developed lately... including the one that just maybe the best meatloaf recipe I’ve ever done.

Stuffed Meatloaf Ingredients
This recipe uses really simple ingredients, all of which should be easy to find in pretty much any grocery store.
A few notes for you:
Ground Chicken
I use ground chicken for this, as I like the way it works with the seasonings, to provide a good base for the corned beef and melted cheese.. Without overpowering them.
That said, you can make this stuffed meatloaf recipe with ground turkey, lean ground beef, ground pork, or a combination of any of these, if you like.
Corned Beef
I’ll generally use deli sliced corned beef, as it’s the easiest to roll and layer.
If you can’t find corned beef for whatever reason, you can use deli sliced pastrami or Montreal Smoked Meat, for a similar flavour profile.
That said, you CAN use myHomemade Corned Beef, if you’d like.
You’ll just want to chill it really well and use a really sharp knife to thinly cut the meat across the grain.
Swiss Cheese
I usually use Swiss Cheese slices, as that’s what we tend to have on hand. If you want to use shredded Swiss cheese, use 1 ½ cups or so.
If you want to play with the flavours in this one - and veer away from it being a Reuben - you can use Pepper Jack cheese, or even a sharp cheddar cheese.
Sauerkraut
You can use whatever sauerkraut you like, the big thing is that you want it VERY well drained.
I’ll drain mine for 20 minutes or so before getting started, then squeeze it in a couple layers of paper towels, for good measure.
Thousand Island Dressing
Like most meatloaf recipes, this one involves a relatively sweet sauce.
Rather than using bbq sauce, tomato sauce, or some kind of ketchup glaze, this delicious cheesy meatloaf uses Thousand Island Dressing - just like the sandwich.
Just be sure to use a gluten free dressing, if you need this meatloaf to be gluten free.
If you’re not a fan of Thousand Island - or have to avoid it due to other allergens - The Dijon mustard sauce on my Chicken Cordon Bleu Meatloaf would work well with this.
Not technically “Reuben” at that point... but Mustard does go really well with corned beef, Swiss cheese, and sauerkraut in general!
Everything Else
Rounding out this recipe, you’ll need:
1 Large Egg
Caraway Seeds
Onion Powder
Garlic Powder
Salt and Ground Black Pepper
... I just really don’t have anything to add, as far as these last few ingredients go. Pantry staples, for the most part!

How to Make Reuben Stuffed Meatloaf
The full recipe is in the printable recipe card at the end of this post, here is a visual walk through:
Preheat oven to 350 F, generously grease a loaf pan with cooking spray, set aside.
In a large mixing bowl, mix together chicken, caraway seeds, egg, onion powder, pepper, salt, and garlic powder.
Spread meatloaf mix out onto a sheet of parchment paper that’s been sprayed with nonstick cooking spray. I like to aim for the length of my loaf pan (8"), by however long it ends up, when spread to about ¾" thick.
Top with Swiss cheese slices, then evenly scatter the drained sauerkraut over the cheese.
Be sure to pick up the paper on the end you’re rolling, going kind of up and over, rather than a straight roll. You want to keep the filling in, not push it.
Transfer meatloaf to the prepared pan, seam side down. I roll it as close to the end as possible, then use a flat spatula to slide the whole thing into the pan.
Pat the meat down, if it needs to be evened out at all.
Spread Thousand Island Dressing evenly over top of the meat.
Bake in the preheated oven for 1 hour 20 minutes, or until an instant-read thermometer measures the internal temperature at 165 F.
Carefully drain excess water from the pan, before removing the meatloaf and serving.
Best served Reheated.

Reuben Stuffed Meatloaf
Equipment
- 1 Loaf pan
Ingredients
- 2 lbs Ground Chicken
- 2 tablespoon Caraway Seeds
- 1 Large Egg
- 1 teaspoon Onion Powder
- ¾ teaspoon Pepper
- ¾ teaspoon Salt
- ½ teaspoon Garlic Powder
- 8 oz Thinly Sliced Corned Beef
- 6-8 slices Swiss Cheese
- 1 cup Sauerkraut VERY well drained and blotted with paper towel.
- ½ cup Thousand Island Dressing
Instructions
- Preheat oven to 350 F, generously grease a meatloaf pan, set aside.
- In a large bowl, mix together chicken, caraway seeds, egg, onion powder, pepper, salt, and garlic powder.
- Spread chicken mixture out onto a sheet of parchment paper that’s been sprayed with nonstick cooking spray. I like to aim for the length of my loaf pan (8"), by however long it ends up, when spread to about ¾" thick.
- Lay out the corned beef slices to cover the chicken - leaving 1" uncovered, across each of the short sides.
- Top with Swiss cheese slices, then evenly scatter the drained sauerkraut over the cheese.
- Starting with one of the short ends, roll up the meatloaf along the length of it - the parchment paper will help with this.
- Be sure to pick up the paper on the end you’re rolling, going kind of up and over, rather than a straight roll. You want to keep the filling in, not push it.
- Transfer meatloaf to the prepared pan, seam side down.
- Spread Thousand Island Dressing evenly over the meatloaf.
- Bake for 1 hour 20 minutes, or until a meat thermometer measures the internal temperature at 165 F.
- Carefully drain liquid from the pan, before removing the meatloaf and serving.
