This Buffalo Chicken Nachos recipe is a bit more work than some, but worth it - Buffalo Wing Cheese Sauce & Ranch Sour Cream are fantastic!

In NO WAY am I into any form of Sportsball(tm), but I’ve got to say ... the recent excitement in Toronto over ALMOST winning the World Series has me thinking about viewing parties.

I don’t know, something about the nonstop chatter on the radio - and everywhere! - flipped a switch and got me brainstorming all kinds of Superbowl Party food recipes.

So, expect a lot of that kind of thing coming up here in the near future, LOL.

Anyway, I recently made a Buffalo Chicken Pizza for my husband, got jealous, and decided to work those same flavours into a plate of nachos that I could indulge in... without the gluten of his treat.

This Buffalo Wing Nachos recipe turned out fantastic! Enough heat to be “buffalo wing” appropriate, but not enough to really slow anyone down in plowing through a serving of them.

This recipe involves a quick nacho cheese sauce, made with hot sauce, beer (or chicken broth!), and cheese - SO good, and with very little effort. It's topped off with a ranch-seasoned sour cream that goes PERFECTLY with the buffalo wing flavours.

Anyway, let’s look at what you’ll need to have on hand, to whip up a batch of this deliciousness for yourself!

Ingredients

This recipe uses really simple ingredients, you won’t have any trouble finding everything you need in any larger grocery store.

As always, I have a few ingredient notes for you:

Shredded Monterey Jack Cheese: Feel free to swap mild cheddar, medium cheddar, marble jack, colby, or a mix of any of those cheeses. Shredding your own will make for a smoother sauce, but pre-shredded will work. That’s actually what I used for this batch, as I was feeling lazy!

Beer, or Chicken Broth: Make sure your beer is gluten free, if you need to keep this gluten free. Otherwise, chicken broth works well.

Frank’s RedHot Sauce: Use the “original hot sauce”, NOT the Buffalo Sauce.

Shredded Chicken: I’ll use the cooking technique in my Dutch Oven Pulled Chicken recipe, but hit it with an electric mixer once it’s cooked and drained. SO easy!

Celery: I like to “Star Trek” my celery for this. That is to say, I slice them on a diagonal, in such a way that they look like comm badges. Feel free to chop them any way you want, though!

Everything Else

Rounding out this recipe, you will need:

Corn Tortilla Chips (We use white corn chips)
Sour Cream
Ranch Dressing
Red Onion (Optional)
Cayenne Pepper
Corn Starch
Dill Weed
Dried Parsley
Garlic Powder
Onion Powder
Ground Black Pepper
Salt

... I just don’t have anything to add, as far as these last few ingredients go.

Sure, there are more seasonings than many nacho recipes call for, but it really does make for the best finished dish!

How to Make Buffalo Chicken Nachos

Ranch Sour Cream

In a small bowl, whisk together the sour cream, Ranch dressing, dill, parsley, garlic, and onion powders. Season with salt and pepper, to taste.

Cover with plastic wrap and chill until ready to use.

Buffalo Nacho Cheese Sauce

In a medium bowl, toss the shredded cheese with the cornstarch, evenly coating the cheese. Set aside.

In a small saucepan, whisk together the beer, hot sauce, cayenne powder, and garlic powder. Heat over medium-high heat until simmering.

Add the cheese, a handful or so at a time, stirring to combine and melt.

Once all cheese is melted and smooth, season with additional cayenne, if desired, and keep warm - stirring often - until you’re ready to assemble the nachos.

Buffalo Chicken Nachos Assembly

Arrange about half of the tortilla chips on your serving platter. Drizzle with about half the Buffalo cheese sauce, then scatter half the chicken, celery, and onion. Drizzle with a bit of hot sauce.

Top with Ranch Sour Cream, and serve immediately.

Leftovers

As with most nachos recipes, this one is best served immediately, and doesn’t work super well as leftovers.

If the recipe makes more than you need, I recommend reserving some of the ingredients - stored separately, in airtight containers - and just assembling a second small nachos platter later.

The Buffalo Wing Cheese Sauce will thicken and possibly separate when cooled. You’ll want to GENTLY reheat it - stirring frequently - until it’s once again smooth. You may want to add a little more beer/chicken broth, to help smooth and thin it out.

Buffalo Chicken Nachos

  • 1 Serving Platter

Ingredients

Ranch Sour Cream

  • ½ cup Sour Cream
  • ¼ cup Ranch Dressing
  • 1 teaspoon Dill Weed
  • ½ teaspoon Dried Parsley
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • Salt and Ground Black Pepper to Taste

Buffalo Nacho Sauce

  • 3 cups Shredded Monterey Jack Cheese
  • 1 tablespoon Corn Starch
  • ⅓ cup Chicken Broth or Beer
  • ¼ cup Frank’s RedHot Sauce
  • 1 tablespoon Cayenne Pepper
  • 2 teaspoon Garlic Powder

Buffalo Chicken Nachos

  • 8 oz White Corn Tortilla Chips
  • 2 cups Shredded Chicken
  • 3 Celery Ribs Star Trekked
  • ¼ Red Onion Chopped
  • Frank’s RedHot Sauce

Instructions

  • Cover with plastic wrap and chill until ready to use.
