Gluten Free Peanut Butter Cookies

These gluten free peanut butter cookies are the best you'll ever have - soft, chewy, and they taste even better than wheat-based cookies.   Perfect for your holiday dessert tray, no one will know they're gluten-free!

YOU WILL NEED: Peanut butter Unsalted butter Granulated sugar Light brown sugar Brown rice flour Sorghum flour Coconut flour Tapioca starch Large eggs Vanilla extract Xanthan gum Baking powder Baking soda Salt

Whisk together dry ingredients - except sugars -  set aside.

In a stand mixer, cream together butter, peanut butter, sugar, and brown sugar until smooth and fluffy.     Add in eggs and vanilla extract, continue beating until well incorporated and smooth.

Slowly add dry mix to the mixer bowl, and carefully mix until well incorporated and smooth.

Wrap dough in plastic film, chill for 1 hour.

Roll balls out of the cookie dough, arrange on prepared baking sheets. Gently press the top of each cookie with a fork.

Bake until golden brown. Cookies will look puffy, but flatten out as they cool. Enjoy!
