Gluten Free Candy Cane Cookies

These festive Gluten Free Candy Cane Cookies are fun, tasty, and easy to make. Also, you'd never know they're gluten-free - they have great flavour and texture!

YOU WILL NEED: White rice flour Sorghum flour Coconut flour Tapioca starch Granulated sugar Unsalted butter Large eggs Xanthan gum Peppermint extract Baking powder Salt Gel food colouring

Follow the linked recipe to make the base gluten free sugar cookie dough.

Divide cookie dough into 3 balls - 2 larger, one a bit smaller. Tint each with gel food coloring, as directed. (The smaller ball should be green!). Wrap and chill.

Divide each dough ball into 4 equal pieces, and each of those 4 pieces into 4 pieces.  You should have 16 pieces of each colour. Note: I'll usually divide in 4, roll, then cut to divide.

Following your choice of directions in the post, roll the dough balls out into thin logs, cut in half, and roll into candy cane cookies.

Bake cookies until golden brown on the bottom.  Once completely cool store in an airtight container until serving.
