They melt in your mouth, and are perfect for your Christmas Cookie tray.

YOU WILL NEED: White rice flour Sorghum flour Coconut flour Corn starch Butter Brown sugar Milk Vanilla extract Tapioca starch Xanthan gum Salt

Mix butter and brown sugar JUST until combined. Add milk & vanilla, gently mix to combine. In a separate bowl, whisk remaining ingredients.

Add dry mix to butter and sugar, mix until combined, then knead lightly until smooth. Wrap, chill 1 hour.

Roll dough, cut into shapes. Pierce each gluten-free shortbread cookie with a fork (I forgot to, on this batch!)

Bake until lightly golden, allow to cool at least 5 minutes before moving.
