Gluten Free Cranberry Orange Bread

This Gluten Free Cranberry Orange Bread - with a sweet orange glaze - is a fantastic gluten free breakfast treat.  A little sweet, a little tart, great flavor & texture, easy to make!

YOU WILL NEED: Fresh or frozen cranberries Granulated sugar Sorghum flour Light buckwheat flour Coconut flour Powdered sugar An orange Vanilla yogurt Vegetable oil Large eggs Vanilla extract Baking powder Xanthan gum Baking soda Salt Nuts (optional)

Whisk together flours, baking powder, xanthan gum, baking soda, and salt. Set aside.     In a separate bowl, whisk together sugar, yogurt, orange juice, vegetable oil, eggs, vanilla, and orange zest until smooth.

Combine wet ingredients, dry ingredients, cranberries, and nuts (if using).  Spread batter into prepared pan.

Bake as directed, until crust is golden brown, and knife inserted comes out clean.

Whisk together the orange glaze ingredients until smooth. Drizzle glaze over the warm loaf of gluten free orange cranberry bread.

Allow glaze to set up for at least 15 minutes before cutting - if you’ve got that kind of patience! Enjoy!
