Festive Gluten Free Fruitcake

This Gluten-Free Fruitcake recipe is fabulous!  Soaking dried fruit in the alcohol of your choice makes ALL the difference: This is some of the best gluten free Christmas baking you'll have!

YOU WILL NEED: Mixed Dried Fruits Southern Comfort* Chopped Pecans Light Buckwheat Flour Sorghum Flour Coconut Flour Sugar Unsalted Butter Milk Large Eggs Lemon & Orange Zest Vanilla Extract Baking Powder Xanthan Gum Salt * Can sub Jack Daniels,  Rum, or Brandy.

A day before baking the fruitcake, chop dried fruits into pieces, mix in Southern Comfort and cover. Strain just before you make your fruitcake, reserving liquid.

Combine flours, baking powder, xanthan gum, and salt.  Set aside.

Whip the egg whites on high speed, until stiff peaks form. Set aside.

Cream butter and sugar until fluffy. Add egg yolks, vanilla, and zests, continue beating until fluffy.

In stages, mix in the dry ingredients, milk, strained fruit, and nuts.

Gently fold whipped egg whites into fruitcake batter, then spread the batter into a prepared cake pan.

Bake as directed, then pour reserved Southern Comfort over the top of the warm cake. Allow to cool fully before serving.  Enjoy!
