Heart Fruit Skewers with Raspberry Cheesecake Dip

Ingredients

Raspberry Cheesecake Dip

  • 1 cup Fresh Raspberries
  • ¼ cup Granulated Sugar or sweetener of choice - see blog post,
  • pinch salt
  • 8 oz Cream cheese softened
  • Zest of 1 lemon
  • 1 teaspoon Vanilla Extract
  • 1 cup Heavy whipping cream

  • 1 Pineapple
  • 1 small Seedless Watermelon
  • 1 Honeydew Melon
  • 1 Cantaloupe

Instructions

Raspberry Cheesecake Dip

  • In a mini food processor, blend the raspberries, sugar, and salt until smooth. If you’d like, you can press this mixture through a fine sieve to remove the seeds, we don’t bother.
  • Add the softened cream cheese, lemon zest, and vanilla, blend until smooth and well combined. Set aside.
  • In a large bowl, use an electric hand mixer to beat the heavy cream until stiff peaks form.
  • Add raspberry cream cheese mixture to the bowl, fold until well combined.
  • Cover and chill until use.

Heart Shaped Fruit Skewers

  • Using a sharp knife, cut the top and bottom off the pineapple, cut into ½"-¾" thick slices.
  • Cut the watermelon into ½-¾" thick slices.
  • Cut the honeydew and cantaloupe in half. Use a spoon to scoop out the seeds and pulp from each melon half, discard. Cut each half into ½-¾" thick slices
  • Use a mini cookie cutter to cut heart shapes from each slice of melon and pineapple, keeping the cuts close together to avoid waste.
  • Thread the cut fruit pieces onto bamboo skewers, and serve with the raspberry cheesecake dip.

Notes

Note: the nutrition information reads a bit higher than it is in reality - there was no option for a small watermelon, it's assuming a full size.
Also, there is a fair amount of fruit that does not end up used in the skewers, just as cut waste.
