Honey Roasted Carrots & Parsnips

Honey Roasted Carrots & Parsnips is an easy side dish that's far more impressive than it has any right to be! With bright fall colors and fresh flavors, it's the perfect side dish for Thanksgiving dinner!

YOU WILL NEED: Fresh Parsnips & Carrots Honey Olive oil Fresh Rosemary Fresh Parsley Garlic Cloves Apple Cider Vinegar Dijon Mustard Salt & Pepper

Peel carrots and parsnips.  Trim the ends, and cut each in half lengthwise. Divide carrots and parsnips between two baking pans.

Peel garlic cloves, press or finely mince them. In a small bowl, whisk together honey, olive oil, rosemary, garlic, vinegar, mustard, salt, and pepper.

Drizzle the sauce over the carrots and parsnips, stir to coat.

Roast glazed carrots and parsnips until fork tender and starting to brown.

Season with additional salt and pepper if desired. Scatter fresh parsley over the roasted vegetables, and serve hot.   Enjoy!
