Gluten Free Raspberry Coconut Bars

These gluten free raspberry bars are an allergy friendly version of my grandma's raspberry coconut bars.  Gluten-free baking SO good, no one will miss the gluten!

YOU WILL NEED: Shredded coconut Raspberry preserves Granulated sugar Sorghum flour Brown rice flour Coconut flour Tapioca starch Unsalted butter Large eggs Milk Vanilla extract Xanthan gum Baking powder Salt

Cream butter and sugar, add eggs, milk and vanilla. Combine dry ingredients, add to the wet mixture to form a dough. Wrap and chill.

Spread dough over bottom of pan, pressing to form a crust. Spread raspberry preserves evenly over the crust.

Whisk eggs until foamy. Add sugar, whisk until well combined. Add remaining ingredients, stir to combine.

Drop spoonfuls of the coconut mixture all over the raspberry layer, and gently spread to create a solid layer.

Bake as directed, cool before cutting into squares. Enjoy!
