Gluten-Free Gougères

[French Cheese Puffs]

These Gluten-Free Gougères are a very tasty - and accurate! - gluten free version of a classic French pastry. Serve these cheese puffs warm or cold, as a festive party appetizer.

YOU WILL NEED: Grated Swiss cheese White rice flour Sweet rice flour Millet flour   Milk Large eggs Butter Spices Xanthan gum Baking powder Salt

Combine dry ingredients, set aside. Bring milk, butter and salt to a boil. Add flour mixture, stir until well incorporated.

Reduce heat. Cook for another minute or so, until the dough comes together, leaving the sides of the pan.

Beat the dough for a minute to allow it to cool slightly. Add beaten eggs a little at a time, allowing eggs to fully incorporate before adding more.

It may look like a separating mess, but I promise it will come together!

Once the eggs are all incorporated and dough is smooth, add cheese.  Continue beating it to melt and distribute the cheese.

Pipe or walnut-sized mounds of batter onto lined baking sheets, bake as directed in the linked recipe.

Allow the gluten-free gougeres to cool in the oven with the door cracked.    Enjoy!
