Gluten-Free Gingerbread Loaf

This festive Gluten-Free Gingerbread Loaf is the perfect holiday quick bread to serve on Christmas morning.  Low effort, GREAT taste and with a soft texture that no one will realize is actually gluten-free!

YOU WILL NEED: Light Buckwheat Flour Powdered Sugar Sorghum Flour Molasses Buttermilk Brown Sugar Vegetable Oil Coconut Flour Large Eggs Vanilla Extract Xanthan Gum Spices Baking Powder Baking Soda Salt

Whisk together the dry ingredients, set aside. In a separate bowl, whisk together buttermilk, molasses, oil, eggs, and vanilla until smooth and well combined.

Add the wet ingredients to the bowl of dry ingredients, stir just until combined. Pour batter into prepared pan.

Bake as directed in the linked recipe. The loaf is done when a knife inserted into the middle comes out clean.

Following the directions in the linked recipe, whisk together the vanilla glaze ingredients.  I like to heat it for a few seconds in the microwave, to liquify it.

Drizzle glaze over the warm loaf, allow to set for at least 15-20 minutes before slicing.

Best served room temperature or warmer. Enjoy!
