Gluten Free Blueberry Banana Bread

This Gluten-Free Blueberry Banana Bread is a tasty upgrade to the traditional quick bread. It's moist, easy to make, and uses fresh or frozen blueberries!   A great gluten free breakfast or snack.

YOU WILL NEED: Fresh or Frozen Blueberries Large RIPE Bananas Granulated Sugar Light Buckwheat Flour Sorghum Flour Coconut Flour Vegetable Oil Large Eggs Vanilla Extract Baking Soda Salt

Whisk together flours, baking soda, and salt. Set aside.

In a separate bowl mash together together bananas & sugar.  Add vegetable oil, eggs, and vanilla extract to the mashed bananas, stir well to combine.

Add the dry mixture to the wet ingredients, stir to combine. Toss the blueberries with the remaining buckwheat flour, fold into the batter.

Pour batter into the prepared loaf pan. Sprinkle with coarse sugar and/or additional blueberries, if desired.

Bake in the preheated oven until crust is golden brown, and knife inserted into middle of loaf comes out clean.   Don't overbake it, or it could turn out dry.
