Chewy Gluten Free Apple Pie Cookies

These tender gluten free apple pie cookies are everything you could want in a fall cookie - fresh apples, tasty spices, and great texture.  Perfect for Thanksgiving!

YOU WILL NEED: Light buckwheat flour Sorghum flour Rice flour Coconut flour Tapioca starch Large apples Brown sugar Unsalted butter Large egg Milk Vanilla extract Cornstarch Spices Baking powder Xanthan gum Salt

In stages, cream together butter, sugar, egg, milk, and vanilla.  In a separate bowl, mix the dry ingredients.

Slowly the dry mix to the mixer bowl, and carefully mix until well incorporated and smooth. Wrap dough in plastic film, chill.

Following the linked recipe, make the quick apple pie filling. Allow to cool to room temperature.

Roll gluten free cookie dough into balls, then use your thumb to form them into "pie crusts".

 Fill each indentation with about 1 teaspoon of apple pie filling     Bake  until lightly browned.

Allow to cool for 5 minutes, before transferring to a rack to fully cool.  Enjoy!
