Gluten Free  Apple Cake

This delicious gluten free apple cake is everything you want in a fall dessert:  A soft and tasty gluten-free spice cake, apple filling, and brown sugar frosting.   Perfect for Thanksgiving!

YOU WILL NEED: Apples Light buckwheat flour Sorghum flour Coconut flour White rice flour White & brown sugar Instant vanilla pudding mix Baking powder Spices, Salt Large eggs Buttermilk Butter Vanilla extract Brown sugar buttercream* *See the linked post for the frosting recipe.

Combine all of the dry ingredients in a large bowl. Add the egg yolks, buttermilk, shredded apple, melted butter, & vanilla. Stir well.

 Whip the egg whites until stiff peaks form, fold into the cake batter.  Divide into prepared cake pans.

Bake until golden and knife inserted into center of batter comes out clean.  Cool to room temperature. Cut the rounded “dome” off the top of each cake round, then wrap with plastic wrap until you're ready to assemble the cake.

Combine melted butter, brown sugar, cinnamon, nutmeg, & salt in a pot. Add apple slices, cook until tender.

Remove from heat, drain the apples off the syrup.  Allow apples to cool, reserve the syrup as a drizzle for later.

Following the directions in the linked post, assemble your gluten free layer cake.

Decorate the cake with extra frosting, the leftover sauce, and/or fresh apple slices.  Enjoy!
