Easy Gluten Free Banana Bread

This super tasty, easy gluten free banana bread is indistinguishable from the original, wheat flour favourite - with only a couple more ingredients! Some of the easiest gluten free baking you'll ever do!

YOU WILL NEED: Large RIPE bananas Granulated sugar Light buckwheat flour Sorghum flour Coconut flour Unsalted butter Large eggs Baking soda Salt Nuts and/or raisins optional

Mix together mashed bananas, butter, egg and sugar until smooth-ish.

Whisk together dry ingredients, then add to the banana mixture along with nuts / raisins if using. Mix just until everything is well combined.

Pour batter into a prepared loaf pan, bake until crust is a rich golden brown

Banana bread is done when a and knife inserted into middle of loaf comes out clean.
